家常茄子


大老爺好鍾意食茄子,

我時不時都會煮嚟食,

好食但個樣唔靚,

所以好少 post 上嚟囉!

舊式煮茄子係要經油炸過,

我地咁健康梗係唔會咁做啦,

我只係将茄子落鑊炒,

但係一定要多啲時間将茄子炒透!



材料:
大茄子一隻
蒜頭2粒剁蓉
蔴油少許
香醋半湯匙

汁料:
蠔油1湯匙半
生抽 1 湯匙
豆辦醬半湯匙
水半杯


做法:
燒红鑊, 下油, 将茄子炒透
加入蒜頭爆香
加入汁料將茄子煮腍
加入蔴油, 香醋, 兜勻上碟

  6. 剛在 Facebook 見到有網友話用水灼都唔會變色,保持紫色,秘訣係茄子一定要完全浸入水內,避免接觸到空氣而氧化變色,所以一定要用道具壓住茄子,唔俾佢浮上嚟露出水面,佢話用日本鍋的木蓋最正!
