京醬肉絲


老北京食過京醬肉絲,

我又心思思想整呀,

屋企無甜麵醬,

用磨豉醬代替!

材料:
梅頭肉 300g 切條
葱二條切絲
蒜頭2粒剁蓉

汁料:
磨豉醬1湯匙
茄汁1湯匙
糖1湯匙
绍酒1湯匙
水1湯匙


做法:
肉絲用鹽半茶匙, 生抽半湯匙, 油, 略醃
燒紅鑊, 下油, 将肉絲炒熟, 取出待用
另起鑊, 爆香蒜蓉, 下汁料煮滚, 將肉絲回鑊兜勺, 放在葱絲面, 灑上芝麻即成
